So, the summer is here and my garden is exploding with veggies! Of course we share, pickle and find other ways to use the excess BUT one of our favorite ways to use up our cucumbers is cucumber salad. It’s refreshing and uses veggies right out of my garden. 😀 Also, it seems that cucumber salad can be a cancer fighting recipe too….depending on how you make it. 😀
2 large cucumbers (your favorite kind)
1/2 of a large onion (kid friendly version – you can add more if you like)
1/4 cup of fresh dill
3 tablespoons of white vinegar (try a fruity vinegar for a different flavor)
3 tablespoons of vegetable oil
Salt and Pepper to taste
Optional: You can also add summer tomatoes to the mix if you have them
Slice your cucumbers very thin
dice your onion slices into tiny bits
chop your dill into tinier bits 😀
Combine these 3 ingredients into a bowl
Season with Salt and Pepper
Pour in the vinegar and stir until the cucumbers are coated
Pour in the oil and again stir to coat the cucumbers
Put the vinegar on first so that it can soak in to the cucumbers & is not repelled by the oil. 😀
Cucumber Salad Can Be A Cancer Fighting Recipe
So, what about cucumber salad can help fight cancer? Well, it’s not gonna shrink tumors but so many things in this salad have properties that either inhibit cancer, slow it down or kill it. Of course, it depends on the cancer and how much salad you’re eating! I’m thinking none of us are eating that much but still…..it helps, right!? So, let’s look at some of the ingredients!
Cucumbers – Cucumbers seem like they’re just water don’t they? Well, they’re not….there’s a lot going on under that green skin! Cucumbers have been shown to be anti-inflammatory, help to rid us of free radicals…and check this out.
As a member of the Cucurbitaceae family of plants, cucumbers are a rich source of triterpene phytonutrients called cucurbitacins. Cucurbitacins A, B, C, D and E are all contained in fresh cucumber. They have been the subject of active and ongoing research to determine the extent and nature of their anti-cancer properties. Scientists have already determined that several different signaling pathways (for example, the JAK-STAT and MAPK pathways) required for cancer cell development and survival can be blocked by activity of cucurbitacins. Dill – This is a good one and I think you will be happy to know that dill is extremely healthy for you! In fact, Russian Scientists are figuring out ways to use parsley and dill to fight cancer. Modern medicine has found dill to contain such vitamins and minerals as vitamins A, C, and B6, fiber, calcium, iron, manganese, and folate, as well as more obscure compounds that could fight not just bacteria, but cancer, such as the enzyme glutathione-S-transferase due to the presence of the monoterpenes anethofuran, carvone, and limonene, and the healing flavonoids kaempferol and vicenin. Now, I’m sure that a little dill in your egg salad or cucumber salad won’t be the sole factor for changing the direction of your cancer battle but a little helps…and it really helps our cucumber salad taste good and it’s not bad for you! All of these things are a plus!
Onions – Now, this one will get your wheels turning! Onions are super cancer fighters. Now, just like a lot of things, certain varieties seem to work better for different kinds of cancer and so, you might need to do a bit of leg work to find if onions will help you but overall they are great! Here’s a little information.
According to a new study by Cornell University food scientists, led by Rui Hai Liu, M.D., Ph.D., associate professor of food science, shallots, Western Yellow, pungent yellow and Northern Red onions are higher in anti-cancer chemicals than other varieties tested. Furthermore, Liu found that shallots and Western Yellow and pungent yellow onion varieties are particularly effective against liver cancer cells, while pungent yellow and Western Yellow varieties have the greatest effect on colon cancer cells. What about Vegetables In General
Let me put this together as I see it….you can form your own opinion of course! I think that if you have no cancer and use veggies to stay healthy then good for you! You can’t do any better than eating a big plate of healthy, organic and non GMO veggies. Does it prevent cancer? Well, I don’t know if it has been proven to fight cancer but I do know that there are studies showing that cancer can be killed with some veggies. Most of those studies are In Vitro (test tubes) and so using veggies to fight cancer takes on a different meaning when you eat them…which is In Vivo (living flesh). Here’s what I do believe. I do believe that juicing can deliver highly concentrated nutrients very quickly to your body without eating a barge full of food. I do believe that there are compounds in certain foods that directly kill cancer cells. It’s just that some of these compounds must be extracted from the foods in order to get enough of it to work…..we can’t just eat 50 lbs of onions and so on. Still, there are some that would claim that the radical approach will work and go to places that offer the Gerson Therapy or simply choose to juice themselves.
I believe that each person is different and depending on they type of cancer, tumor burden and approach to fight it then you may find something that works for you. I chose to be moderate. I chose modern medicine such as Chemo (Here are my posts about that) and Radiation in the form of PRRT (Here are my posts about PRRT) as well as changing my diet to be mostly vegetable based. The truth is, the vegetables make me feel healthier and I think are making me healthier. No, I have no evidence to prove this because I didn’t perform a study or get baseline scans…and it was all mixed with chemo and everything else.
