A Giant Pot of Risotto Will Help You Eat Right

Busy much? 🙂 Honestly, do we REALLY have time to eat right and, for me at least, adopt a new way of eating all together?!  Hardly, but we have to do our best for ourselves and our family and, if you have cancer, for your cancer fight. Eating a plant based diet is, in my opinion, one of the most important things you can do to take control of your cancer fight and your health in general. It gives you control over something when you have lost control over everything that matters to you. Now, it won’t be easy which is why I have included this short post in my blog. A giant pot of risotto will help you eat right. Here’s how.

First, let me get my confessions out of the way. Have I eaten burger king since I’ve gotten cancer? Yes. Have I enjoyed a meal that was not plant based but rather meat based? Yes. Do I do it often? No. So, this is me trying to stay on the “straight and narrow”. 🙂

A Giant Pot of Risotto Will Help You Eat Right

Now, when you look for risotto recipes you will find that they use cream, milk, butter, white wine and so on.  Here’s why I’m not doing any of that. First, as part of my cancer fight, I am trying to avoid dairy products, and so I don’t want to use any of those sort of ingredients. Also, the wine and spices and herbs are all delicious BUT…..you will only be able to use the risotto for very specific things if you add all of those ingredients.

What we are looking for is a pot of delicious creamy rice that we can add to a number of various meals. So, instead of using the ingredients we just spoke about I use coconut milk or almond milk (plain not vanilla and unsweetened). This gives me a pot of rice that I can use almost anywhere I choose. I add my risotto to gazpacho to beef it up a bit. I use it as a side with veggies at dinner and, best of all, I use it during breakfast. I just ate a delicious bowl of strawberry risotto for breakfast. (Recipe to come) I made it with coconut milk so it was nondairy too. Also, did you know that organic strawberries are an awesome cancer fighter?!  It’s true. You can read my post about cancer fighting berries here.  🙂

As you can see, having a giant pot of risotto in the fridge really makes things easier when it comes to staying on track with your new dietary plans. All you need to do is add a bit more coconut milk, almond milk or whatever you made it with to the pan and warm the risotto up. It returns to that creamy, delicious rice you had when you first made it and it saves you a lot of time. Convenience is so important in our busy lives, right?!  🙂

Oh, and if you have meat eaters in the house, this will be delicious for them as well. You can treat it like any other rice that they are used to. It’s a very versatile side dish. So, make a big pot of risotto, stick it in the fridge and save yourself some time.

  1. What a great idea! I never thought of using Coconut Milk! Who would have ever thought that I would get a recipe idea (that is actually GOOD) from my brother!! 🙂
